Instructions
Preheat oven to 180°C. Grease and flour the cake pan.
In a bowl, sift together the flour, baking powder and salt. Set aside.
In another bowl, beat the eggs with the sugar until you obtain a frothy, light-colored mixture.
Add the vanilla essence and milk, and mix well.
Gradually incorporate the sifted dry ingredients into the wet mixture, mixing with enveloping motions until a homogeneous dough is obtained.
Pour the batter into the pan and bake for approximately 25 minutes, or until a toothpick inserted in the center comes out clean.
Once baked, remove the cake from the oven and let it cool for a few minutes. Then, poke small holes in the surface of the cake with a fork.
In a bowl, mix the evaporated milk, condensed milk and whipping cream. Pour this mixture over the cake, making sure it is well absorbed.
Refrigerate the cake for at least 4 hours, or preferably overnight, so that it absorbs the liquids well.
If desired, before serving, sprinkle powdered sugar over the cake and decorate with fresh fruit.
Notes
You can add a touch of rum or almond extract to the tres leches mixture for extra flavor.
For a tropical variation, add pineapple slices between the cake layers before adding the tres leches mixture.
